  1. Step 1: Rinse the wild rice three or four times in cold water. Soak for ½ hour, then drain.

  2. Step 2: Put in a large kettle of boiling salted water and boil slowly, uncovered, for ½ hour.

  3. Step 3: Drain the rice in a sieve and set the sieve over a pan of lightly boiling water. Cover with a lid and steam for 1 hour.

  4. Step 4: When the rice is puffed open, place in a shallow dish, add 2 Tbsp. softened butter and fluff with a fork.

  5. Step 5: In a skillet, sauté the onion and chopped turkey livers in 3 Tbsp. butter over low heat for 2 minutes.

  6. Step 6: Add mushrooms and celery and sauté over moderate heat 3 or 4 minutes.

  7. Step 7: Combine the mushroom mixture with the rice. Add pecans, parsley, thyme and marjoram. Salt and pepper to taste.

  8. Step 8: Let the mixture cool before stuffing the turkey.

From the cook

This is for the Thanksgiving turkey. Do not stuff the bird until just before it goes in the oven.
