  1. Step 1: Cream butter and sugar; add eggs one at a time.

  2. Step 2: Stir in marmalade, orange rind and vanilla.

  3. Step 3: In a separate bowl, combine flour, soda and salt. In another, combine orange juice and evaporated milk.

  4. Step 4: Add the flour mixture to the butter mixture alternately with the juice mixture, beginning and ending with flour. Mix at low speed after each addition.

  5. Step 5: Stir in pecans.

  6. Step 6: Bake in a buttered Bundt pan at 350°F for 45 minutes, or until a tester comes out dry.

  7. Step 7: Cool on a wire rack 15 minutes, then turn the cake out onto the rack.

  8. Step 8: For the glaze, immediately combine orange juice and sugar in a small saucepan. Cook over medium heat, stirring often, until the sugar dissolves.

  9. Step 9: Prick the cake at 1-inch intervals with a long skewer. Brush the hot glaze over the top of the warm cake.

  10. Step 10: Cool completely on the wire rack.

From the cook

Ron and several other Woodlands residents read the "Mitford" series, in which a marmalade cake comes up throughout one of the books. Everyone was craving it afterward, so Ron found this recipe and passed it around.

What we changed or couldn’t read (1)
  • Source prints "Midford Series"; this is almost certainly Jan Karon's Mitford series, which features an orange marmalade cake.
