Name: "K" Cookies
Yield: Makes 50 cookies
Ingredients: 1 stick butter or margarine; ¾ cup light brown sugar, firmly packed; ¼ cup granulated sugar; 1 egg; 1 cup flour; ½ tsp. baking soda; ¼ tsp. salt; 1 tsp. vanilla; 2 cups Special K cereal; ¼ cup chopped nuts; ½ to ¾ cup shredded coconut

Step 1: Cream butter and both sugars until fluffy.

Step 2: Add egg and continue to beat.

Step 3: Sift flour, soda and salt together and add; beat only until well mixed.

Step 4: Fold in vanilla, cereal, nuts and coconut.

Step 5: Drop by spoonfuls onto an ungreased cookie sheet.

Step 6: Bake at 350°F for about 10 minutes.

Step 7: Remove from the hot sheet immediately and leave upside down to cool so they do not stick together.
