Tap a step to mark it done.

  1. Step 1: Mix the topping first: stir the sugar, orange juice and rind occasionally to dissolve the sugar. Do not cook.

  2. Step 2: Dredge the dates and nuts in a small amount of the flour.

  3. Step 3: Cream the shortening, adding the sugar gradually, and cream well.

  4. Step 4: Add the beaten egg yolks.

  5. Step 5: Sift the flour 3 times. Dissolve the soda in the buttermilk.

  6. Step 6: Add the flour alternately with the buttermilk.

  7. Step 7: Fold in the floured dates and nuts and the orange rind.

  8. Step 8: Fold in the stiffly beaten egg whites.

  9. Step 9: Bake at 300°F for 1½ hours.

  10. Step 10: While the cake is still hot from the oven, puncture holes all over the top with an ice pick.

  11. Step 11: Strain the topping and pour it over the cake. Leave the cake in the pan so the topping soaks in.
